SOUTHWEST CLUB SANDWICH

Ah, Summertime.  Barbeque's and bike riding, swimming all day, and picnic table dinners.  Here is a tried and true warm weather favorite with a twist.  A club similar to your parents, but with a little kick added for this generation. 
The Southwest Club

12 slices Sara Lee whole wheat bread
8 full length slices Oscar Meyer bacon, cooked crisp
4 med. thick slices of Sara Lee Barbecue Chicken deli meat
4 med. thick slices of Sara Lee Honey Smoked Ham deli meat
4 square slices Kraft Cheddar Cheese
4 square slices Kraft Provolone Cheese
4 thin slices of tomatoes
Endive lettuce (can use spinach instead)
Kraft Miracle Whip
Texas Pete's Honey Mustard
Peeled and thinly sliced Cucumbers are optional 
Toothpicks

      Lay out 4 slices of bread, spread each with:  Miracle Whip to taste, and a slice each of Provolone cheese, BBQ chicken , tomato, and piece of lettuce.  Next add another slice of bread, spread with Texas Pete's Honey Mustard, add a slice of Cheddar cheese, then add a slice of Honey Ham, break bacon strips in half and add on top of Ham, and next layer on more Endive lettuce.  Finally, take remaining slices of bread and again spread with Miracle Whip, then place on top of lettuce.  Slice finished sandwich diagonally, and place toothpick through each half to secure.  If you desire smaller portions, once you slice sandwich diagonally, slice it again diagonally across opposite corners and then secure with toothpicks.
