SUMMER TUNA SALAD

       Ingredients
2  hard-cooked eggs
1  6 1/2-7 oz can StarKist® tuna (flaked)
1/2 cup chopped celery
1/4 cup chopped cucumber
2  sweet pickles (chopped)
dash of salt
juice of 1/2 a lemon,
      reserve other half for garnish
heaping tbls. of MIRACLE WHIP® Salad dressing
Watercress leaves
RITZ® crackers optional

       Preparation
Bring eggs on stove to a boil for 5 minutes, reduce heat to low and cook for additional 15 minutes.  Remove eggs from heat.  Drain hot water from pan and refill with cold water.  Let eggs chill in cold water at least 15 minutes.  When eggs are cool to the touch, remove shells and rinse cooked egg thoroughly.  In medium size bowl, chop eggs into small pieces.  Add tuna, celery, cucumber, pickles, salt, and lemon juice.  Stir lightly, then add Miracle Whip to moisten.  Toss until all ingredients are well blended, then chill in refrigerator in covered container until ready to serve. 
At meal time, line serving bowls with Watercress leaves, spoon in a scoop of tuna salad mix, and garnish with lemon.  Makes 4 servings.
