ZUCCHINI CAKES

With our garden full of zucchini this time of year, I'm always on the lookout for a new way to serve it to our family.  Hope you enjoy it as much as we did.   

Ingredients:
1 large Zucchini finely grated
     (skin washed and unpeeled)
1/2 cup Kraft shredded Italian 5 cheese blend
8 oz. Progresso Panko bread crumbs
1/4 teaspoon paprika
1/2 small sweet yellow onion, finely chopped
1/2 tsp. garlic powder
1 egg
a dash of salt and pepper to taste
1 1/2 Tbls. olive oil

Directions:
     Using a large mixing bowl, combine all ingredients, except olive oil, thoroughly. Using the palm of your hand or a large spoon form the mixture into patties.  Place patties on a sheet of wax paper until you are ready to cook them.
     Pour olive oil into a pan and heat to medium high. When olive oil has reached cooking temperature, add patties to oil, and cook until golden brown. Around 3 minutes per side. Serve while hot and enjoy.

Recipe makes approx. 8 - 10, 3" dia. cakes

***Note:  Panko crumbs are very crunchy bread crumbs made from Japanese wheat bread, which is slowly dried and then shredded into crispy, jagged flakes.

Okay, we're back on track, a little, with the Z-A Blogger's Challenge. Today's letter is "S" and since this is one of my favorite times of year, I decided to dedicate this one to summer. In recent weeks I posted two articles on Y!CN: 10 Great Summer Albums and Awesome Summer Songs for All Sorts of Summertime Scenarios and both articles put some of those songs in my head, especially the ones that I haven't listened to in years. So, this post is dedicated to some of those great songs that many of us associate with summer. Take a look at the articles to check even more of them out, but in the meantime, enjoy these choice selections...

Anyone who was around in 1978 will remember that classic summer movie, Grease. The film was all about a summer romance between John Travolta's Danny Zuko and Olivia Newton John's Sandy Olsson and was full of memorable tunes such as this one. 'Summer nights' comes at the beginning of the movie and I can remember playing it over and over again during that summer of 78. Check it out:

FRESH FROM THE GARDEN BROILED TOMATOES

What a great way to enjoy your favorite garden grown tomatoes this summer.  From the vine to the table in under 20 minutes.
          Broiled Tomatoes
2 Tbls breadcrumbs
1 Tbls Kraft grated Parmesan cheese
1 tsp McCormick Italian Seasoning
1/2 tsp McCormick Seasoned Salt
4 large ripe red tomatoes
4 tsp Crisco Olive Oil

          Preparation
Core and cut in half crosswise all 4 tomatoes.  Mix cheese, breadcrumbs, Italian seasoning, and seasoned salt thoroughly in small bowl.  Sprinkle sliced side of each tomato with mixture.  Next drizzle each tomato half with approximately 1/2 tsp of olive oil.  Place each half of tomato, coated side up on foil-lined broiler pan.  Place pan in preheated broiler for around 4 minutes or until tomato tops are brown and bubbly, and tomato is hot.

HAM SALAD IN PINEAPPLE BOAT

        HAM SALAD
1  pineapple (with fresh green leaves)
1 1/2  cups cubed ham
1  cup finely chopped celery
4  oz jar of pimentos
1/4  cup shelled sunflower seeds
1/2  cup MIRACLE WHIP
1/2  tsp curry powder
1  tsp soy sauce

        OPTIONAL INGREDIENTS
8 oz Cheddar, Muenster or Monterey Jack cheese, cut into 1/2-inch cubes
1  8oz can mandarin orange segments, drained and cut up
1  cup green seedless grapes, halved
1/4 cup almonds in place of sunflower seeds


The Essential New York Times Cookbook: Classic Recipes for a New CenturyNot Your Mother's Slow Cooker CookbookMix ham, celery, pimentos, and sunflower seeds together in bowl.  Add curry powder and soy sauce to bowl and blend all ingredients.  Next add Miracle Whip to bowl and toss thoroughly until all ingredients are coated.  Cover bowl and refrigerate at least 1 hour.  Cut pineapple lengthwise into quarters through green top.  Cut along curved edges of quarters with grapefruit knife to remove only core, not pineapple.  Place chilled scoops of ham salad in center of pineapple quarters and serve.  Makes 4 servings.

SUMMER TUNA SALAD

       Ingredients
2  hard-cooked eggs
1  6 1/2-7 oz can StarKist® tuna (flaked)
1/2 cup chopped celery
1/4 cup chopped cucumber
2  sweet pickles (chopped)
dash of salt
juice of 1/2 a lemon,
      reserve other half for garnish
heaping tbls. of MIRACLE WHIP® Salad dressing
Watercress leaves
RITZ® crackers optional

       Preparation
Bring eggs on stove to a boil for 5 minutes, reduce heat to low and cook for additional 15 minutes.  Remove eggs from heat.  Drain hot water from pan and refill with cold water.  Let eggs chill in cold water at least 15 minutes.  When eggs are cool to the touch, remove shells and rinse cooked egg thoroughly.  In medium size bowl, chop eggs into small pieces.  Add tuna, celery, cucumber, pickles, salt, and lemon juice.  Stir lightly, then add Miracle Whip to moisten.  Toss until all ingredients are well blended, then chill in refrigerator in covered container until ready to serve. 
At meal time, line serving bowls with Watercress leaves, spoon in a scoop of tuna salad mix, and garnish with lemon.  Makes 4 servings.
