LIME SUMMER DELIGHT!

                  What a wonderful finale for a light Summer luncheon or early Dinner; a slice of cool, refreshing Lime Parfait Pie.   A relatively easy recipe and a sensory delight for the young, and the young at heart.
Ingredients
1  3 oz pkg of JELLO lime-flavored gelatin
1/2  cup boiling water
3/4  tsp of finely shredded lime peel (reserve rest of lime for garnish)
1/4  cup ROSES Lime Juice
1  pint BREYERS ALL NATURAL Extra Creamy Vanilla ice cream
1  cup whipping cream
1  9-inch Baked Pastry Shell (Found in your Grocers freezer case)
1  7 oz. can of REDDI-WIP


        In a large bowl dissolve gelatin in boiling water.  Stir in lime peel and lime juice.  Add ice cream by spoonfuls, stirring till melted.  Chill till partially set (the consistency of unbeaten egg whites).  Whip the 1 cup whipping cream; fold into lime mixture.  Chill till mixture mounds when spooned.  Turn into Baked Pastry Shell.  Chill several hours or overnight till set.  To serve, top with Reddi-Wip topping and add a thin slice of lime for garnish.

A BLOODY EYE OPENER

Ingredients:
Celery Salt
Black Pepper
Lime juice
1 1/2 oz. Bakon Vodka
(a refreshing potato vodka with a savory bacon flavor)
TABASCO Extra Spicy Bloody Mary Mix 


Directions:
Fill the glass three quarters full of ice.  Pour in 1 1/2 ounces of vodka.  Top off the remainder of the glass with the Bloody Mary mix and tsp. of lime juice. Sprinkle the top with celery salt and pepper.  Garnish with stalk of celery and a lime wedge.

SUNSHINE IN THE WINTER TIME

February is National Grapefruit Month
To honor a longtime Citrus favorite, we offer up a salad that's sure to perk up even the frostiest of winter days and it's easy on the waistline too!

Ingredients
2 Avocados, sliced in thin wedges
2 Mangos, sliced in thin wedges
2 Ruby Red Grapefruit, sliced in thin wedges
       Additional salad mix-ins if desired:
Almond or cashew pieces, cottage cheese or finely shredded Cheddar

Ingredients for Vinaigrette
1/2 cup red onion
1/2 cup olive oil
2/3 cup orange juice
1/4 cup white sugar
2 Tbls balsamic vinegar
2 tsps Dijon mustard
1/4 tsp oregano
1/4 tsp black pepper

Directions for Vinaigrette
Combine all Vinaigrette ingredients into blender.  Set to liquify, and process for 1 minute or until all ingredients are thoroughly combined and pouring consistency.

Directions for SaladPlace the avocado, mango, and grapefruit slices into large bowl.  Pour vinaigrette mixture over fruit until all pieces are thoroughly coated.  Arrange fruit onto large serving platter or individual plates.  Garnish with a small pile of Arugula lettuce in center.  Serve chilled anytime; morning, noon or night.

World Cup Cocktail


Viva Mexico! is a spicy margarita that’s easy to prepare and complements all your south of the border dishes.

Ingredients:
2 oz. 1800 Reposado Tequila
½ oz. Orange liqueur
½ oz. Agave nectar
Juice from two squeezed limes
Salt
1 Lime

Mixing Directions
Moisten rim of martini glass with lime wedge and dip into salt. Shake ingredients with crushed ice in a cocktail shaker. Strain in a martini glass over ice cubes. Garnish with a lime wedge.
