ZUCCHINI CAKES

With our garden full of zucchini this time of year, I'm always on the lookout for a new way to serve it to our family.  Hope you enjoy it as much as we did.   

Ingredients:
1 large Zucchini finely grated
     (skin washed and unpeeled)
1/2 cup Kraft shredded Italian 5 cheese blend
8 oz. Progresso Panko bread crumbs
1/4 teaspoon paprika
1/2 small sweet yellow onion, finely chopped
1/2 tsp. garlic powder
1 egg
a dash of salt and pepper to taste
1 1/2 Tbls. olive oil

Directions:
     Using a large mixing bowl, combine all ingredients, except olive oil, thoroughly. Using the palm of your hand or a large spoon form the mixture into patties.  Place patties on a sheet of wax paper until you are ready to cook them.
     Pour olive oil into a pan and heat to medium high. When olive oil has reached cooking temperature, add patties to oil, and cook until golden brown. Around 3 minutes per side. Serve while hot and enjoy.

Recipe makes approx. 8 - 10, 3" dia. cakes

***Note:  Panko crumbs are very crunchy bread crumbs made from Japanese wheat bread, which is slowly dried and then shredded into crispy, jagged flakes.

        What could be more representative of July, than good picnic fixin's.  One of my favorites when entertaining family with alot of small fry to feed, is the wonderfully versatile HOT DOG!  Here are some easy variations that will appeal to crowds of all ages.


Ingredients for a Spectacular Hot Dog Buffet
Hot Dogs - Ball Park franks won't leave em hungry
Hot Dog Buns
Mustard - set out a few different types, such as Dijon, Honey, brandied peach mustard, and Horseradish
Ketchup - Heinz does not run off your dog
Cheese - Kraft American slices, and bowl each of shredded Cheddar and Mozzarella
Sauerkraut - rinsed and drained
Onions - diced
Sweet Pickle relish - Claussen brand stays crunchy and crisp

Along with the basic ingredients above, set out a few toppings geared towards those guests that like their dogs dressed more creatively.

Slaw Dogs:  Make your favorite coleslaw recipe and spoon onto franks.
California Dogs:  top franks with shredded lettuce, chopped tomatoes and onions, and finish with a drizzle of KRAFT Russian Dressing.
Chili Dogs:  top franks with a little mustard, then spoon on heated chili and sprinkle with chopped onions.
Garden-Vegetable Dogs:  Mix together 1 small chopped tomato, 1/2 finely chopped cucumber, 3 diced radishes, and 2 sliced green onions with KRAFT Ranch Dressing.  Spoon over franks.
Pizza Dogs:  Top franks with heated pizza sauce, sprinkle wit

WHOLE WHEAT STRAWBERRY MUFFINS

    Ingredients 
1/4 c. Crisco vegetable oil
1/2 c. whole milk
1 egg
1/2  tsp. salt
2  tsp. Clabber Girl baking powder
1/2  c. granulated sugar
1 3/4 c. Pillsbury Whole Wheat flour
1 c. chopped fresh strawberries
1 c.  finely chopped pecans
           Preparation
1.  Preheat oven to 350 degrees. Grease muffin pan if liners are not used
2.  In a small bowl, combine oil, milk and egg. Beat lightly. In a large bowl, mix flour, salt, baking powder, pecans, and sugar. Blend in chopped strawberries and stir to coat with flour. Pour in milk mixture and stir together.
3.  Put paper liners in pan and pour mixture in muffin cups. Bake in preheated oven for 15 minutes, or until the tops bounce back from the touch.  Cool 10 minutes and remove from pan.

MEATBALL SUB

Looking for a way to feed the growlies, without going broke?  Here is a recipe that is easy on the budget and the cook, and no one will walk away from the table hungry!

Ingredients
1 lb lean ground beef 
2/3 cup dry PREGRESSO Italian seasoned breadcrumbs 
1/4 cup milk
1/4 tsp salt
1/4 tsp black pepper 
1/2 tsp HEINZ Worcestershire sauce
1/4 cup onion, finely chopped
1 egg
3 cloves garlic, crushed and minced
1/4 cup parsley flakes
1/4 cup grated KRAFT Parmigiano cheese
4  6-8" sub rolls

Marinara Sauce
2 Tbls CRISCO extra-virgin olive oil
4 cloves garlic, crushed and chopped  
2 Tbls leaf parsley flakes 
1/2 teaspoon dried oregano
1 28 oz can DELMONTE crushed tomatoes
1 14 oz can DELMONTE chunky style crushed tomatoes
Pinch of salt and black pepper
2 1/2 cups KRAFT shredded Italian 4 cheese blend (10oz bag) 

Meatball Directions
Place lean ground beef in a large mixing bowl.  Add the egg, bread crumbs, onion, garlic, Worcestershire, parsley, cheese, and a little salt and pepper. Mix up meatball ingredients until well combined. Divide mix into 4 equal parts, roll each part into 6 balls.  Cook in skillet on medium heat, turning as needed, until brown (approx 20 min).

Sauce Directons
Heat a medium saucepan over medium heat. Add oil and garlic. When garlic starts sizzling, add herbs. Allow oil to blend for half a minute, then stir in the tomatoes and season sauce with salt and pepper. Bring sauce to a bubble, reduce heat, and simmer until meatballs are removed from frying pan and drained.

Place meatballs into sub rolls, smother meatballs with sauce, and top with shredded cheese.  Set subs on foil lined cookie pan and place under broiler until cheese has turned golden brown.

SUNSHINE IN THE WINTER TIME

February is National Grapefruit Month
To honor a longtime Citrus favorite, we offer up a salad that's sure to perk up even the frostiest of winter days and it's easy on the waistline too!

Ingredients
2 Avocados, sliced in thin wedges
2 Mangos, sliced in thin wedges
2 Ruby Red Grapefruit, sliced in thin wedges
       Additional salad mix-ins if desired:
Almond or cashew pieces, cottage cheese or finely shredded Cheddar

Ingredients for Vinaigrette
1/2 cup red onion
1/2 cup olive oil
2/3 cup orange juice
1/4 cup white sugar
2 Tbls balsamic vinegar
2 tsps Dijon mustard
1/4 tsp oregano
1/4 tsp black pepper

Directions for Vinaigrette
Combine all Vinaigrette ingredients into blender.  Set to liquify, and process for 1 minute or until all ingredients are thoroughly combined and pouring consistency.

Directions for SaladPlace the avocado, mango, and grapefruit slices into large bowl.  Pour vinaigrette mixture over fruit until all pieces are thoroughly coated.  Arrange fruit onto large serving platter or individual plates.  Garnish with a small pile of Arugula lettuce in center.  Serve chilled anytime; morning, noon or night.

EGG SALAD

           In celebration of National Egg Month during January I've pulled out an old favorite of mine.  My siblings and I enjoyed these sandwiches and always thought of them as a special treat from Mom, never knowing until much later in life that she made these right before payday, when her grocery money was getting low.

Ingredients
12 large eggs
5 Tbls. Miracle Whip Salad Dressing®
3 large stalks celery, washed and finely chopped
3/4 medium sweet onion, minced
Squeeze of lemon juice
1 tsp. fresh dill
1 1/4 tsp. chives, finely chopped
3 Tbls. Herlocher's Mustard®
Salt and pepper to taste
Whole-grain bread or Rye 2"x2" petite party loaf bread
Romain lettuce

optional:  tomato

Preparation
Chop hard-cooked eggs into the size of peanuts (my preference). You can try a different cut each time to see how finely you prefer your eggs chopped.  In a large bowl, lightly toss together chopped eggs, Miracle Whip, mustard, dill, chives, lemon juice, celery, onion, salt and pepper. Toast bread if desired. Serve on bread as a sandwich with crisp lettuce.
This recipe makes 8 full slice sandwiches or 32 party petites.

MIXED BEAN SOUP

Someone, somewhere declared January 6th, Bean Day.  Why I don't know, but it makes for a chance to share a nice hearty soup.  A good, hearty meal for the coldest of days.  Goes well with a thick chunk of Pumpernickel, or a wedge of cornbread.


Ingredients
1 pkg Hurst Beef 15 Bean Soup®
(contains these varieties of beans:  Northern, Pinto, Large Lima, Blackeye, Garbanzo, Baby Lima, Green Split, Kidney, Cranberry, Small White, Pink, Small Red, Yellow Split, Lentil, Navy, White Kidney, Black Bean.)
4 cups water
1/2 pound cooked and drained ground beef
2 14.5 oz cans Hunt's Diced Tomatoes w/Balsamic Vinegar, Basil, and oil®
1 cup chopped celery
1 med yellow onion, diced
1 med green bell pepper
1 clove of garlic
1 14.5 oz can of corn

Directions
     Rinse beans and place in med/large stock pot, add enough water to cover beans plus and additional 2-3 inches.  Soak for approximately 4 hours. Once beans have swollen and softened, rinse pot and beans completely. 
     Next place beans back in pot, add 4 cups water, canned tomatoes, garlic, green pepper, onion, and celery.  Cover and bring heat to medium.  Meanwhile, heat skillet with light amount of oil.  Using ground beef, pinch off grape size pieces of ground beef, form small balls and place in skillet to brown. Stir soup occassionally throughout cooking process. 
     When beef is thoroughly cooked and browned add to stock pot.  Simmer soup mixture for 1 1/2 to 2 hours longer and add corn to soup mixture 30 minutes prior to serving.
