REUBEN DIP

If you love Reuben sandwiches from the deli, you'll love this appetizer recipe. Serve it with toasted rye or pumpernickel crackers or better yet rye cocktail bread.

Ingredients
8 oz. pkg. cream cheese, softened
2 cups shredded Swiss cheese
1/2 cup Thousand Island salad dressing
1/4 cup grated Parmesan cheese
1 cup corned beef, chopped
1/2 cup sauerkraut, rinsed and drained


Preparation:
Mix cream cheese and 1 cup Swiss cheese in small bowl. Spread in bottom of 9" pie plate. Drizzle with half of salad dressing. Top with corned beef and sauerkraut. Drizzle with remaining salad dressing. Top with remaining Swiss cheese and Parmesan cheese.
Bake at 375 degrees F for 15-25 minutes until dip begins to bubble around edges and cheese is melted.

PINA COLADA FRUIT DIP

Ingredients
8 oz can crushed pineapple in its own juice
3 1/2 oz pkg instant coconut pudding and pie filling mix
1 thinly sliced banana
1/2 cup small marshmallows
3/4 cup milk
1/2 cup dairy sour cream


Mixing directions
In a blender combine all ingredients including pineapple juice, except banana slices and marshmallows.  Cover, blend 30 seconds.  Fold marshmallows and banana slices into mix.  Refrigerate 4 to 6 hours to completely blend flavors.  Serve with a variety of fresh fruit (Strawberries, pineapple wedges, melon, apples, etc.) 
Makes 2 1/2 cups.

DEEP FRIED CUCUMBERS WITH TANGY DILL DIP

When game day comes, how about serving up a tasty Southern appetizer.
Deep fried Cucumbers 
Ingredients
2 cucumbers, peeled and thinly sliced
salt and pepper
2 eggs, well beaten
1 cups fine dry bread crumbs
1/2 cup bacon dripping

Preparation
Lightly salt and pepper cucumbers and drummettes. Dip cucumber slices first in egg, and then in bread crumbs. Fry in hot bacon drippings. Brown on both sides, drain, and serve hot with the cool dill dip recipe below.
4 servings.

Tangy Dill Dip
Great Party Dips1/2 cup sour cream
1/2 cup Miracle Whip
1 tsp Franks Red Hot Sauce
3/4 Tbls minced onion
1/2 tsp seasoned salt
3/4 Tbls parsley, chopped finely
2 1/4 Tbls dill, chopped finely

In a medium bowl, blend together all ingredients. Mix thoroughly. Chill at least 45 minutes.  The longer you chill, the better the flavors combine.

CUCUMBER ALMOND CREAM CHEESE SPREAD

2   8oz. pkgs. of Philadelphia brand Cream Cheese
2   tsp. lemon juice
1/4 tsp. prepared horseradish
1/4 tsp. salt
1/8 tsp. Franks Hot Sauce
2    tsp. minced onion
1/2 medium cucumber, peeled and finely chopped
1/2 c. almond slivers

Beat cream cheese until smooth.  Add next four ingredients and mix well.  Stir in onion, almonds, and cucumber.  Put in covered container.  Chill one hour before serving
