HAM LOAF

This recipe was my Sister's contribution when her church decided to put together a cookbook to raise funds, a few years back. The blend of meats produce a taste that that is mild, yet distinctive and from personal experience appeals to even the pickiest of eaters.

Ingredients
1 lb ground ham
1 lb ground chuck
1 lb ground pork
2 eggs
1/2 cup graham crackers
1/2 cup saltine crackers
1 cup milk
Mixing Instructions
Mix thoroughly (15 minutes) and shape into loaf.

Sauce Ingredients
1 8oz can tomato sauce
1/2 cup water
1 cup light brown sugar
1/2 cup white vinegar
1 tsp yellow mustard
Mixing Instructions
Mix together and pour 3/4 of sauce over meat mixture.  Bake in a 9 x 13 greased pan at 300 degrees for 1 1/2 to 2 hours, basting every 15 minutes with remaining sauce.

FRIKKADELS

 South African Frikkadels also known as Cape Meatballs

Ingredients
2  lbs ground beef
3/4  cup rye bread crumbs
1/4  cup water
2  oz butter
1  onion, finely chopped
2  medium eggs
1/4 tsp allspice
2 tsp Worcestershire sauce 1/4 cup olive oil
salt to taste
black pepper to taste

Instructions.....Serves 4-6
Traditional South African CookingWhere the Lion Roars: An 1890 African Colonial Cookery BookHeat half the butter in a large frying pan, add the onion and sauté for 5 minutes, stirring from time to time.  Meanwhile, soak the bread in water and then squeeze dry.  Place bread in a large mixing bowl and mash with a fork.  Add the onion mince, eggs, salt, pepper, Worcestershire sauce , and allspice to the bread mixture, blend thoroughly, then shape the meat mixture into balls about the size of a brussel sprout.  Saute meatballs in olive oil over medium heat turning often, until thoroughly cooked and well browned. 

According to tradition this dish is usually served with mashed potatoes and Train Smash (an onion and tomato sauce).
