EGG SALAD

           In celebration of National Egg Month during January I've pulled out an old favorite of mine.  My siblings and I enjoyed these sandwiches and always thought of them as a special treat from Mom, never knowing until much later in life that she made these right before payday, when her grocery money was getting low.

Ingredients
12 large eggs
5 Tbls. Miracle Whip Salad Dressing®
3 large stalks celery, washed and finely chopped
3/4 medium sweet onion, minced
Squeeze of lemon juice
1 tsp. fresh dill
1 1/4 tsp. chives, finely chopped
3 Tbls. Herlocher's Mustard®
Salt and pepper to taste
Whole-grain bread or Rye 2"x2" petite party loaf bread
Romain lettuce

optional:  tomato

Preparation
Chop hard-cooked eggs into the size of peanuts (my preference). You can try a different cut each time to see how finely you prefer your eggs chopped.  In a large bowl, lightly toss together chopped eggs, Miracle Whip, mustard, dill, chives, lemon juice, celery, onion, salt and pepper. Toast bread if desired. Serve on bread as a sandwich with crisp lettuce.
This recipe makes 8 full slice sandwiches or 32 party petites.

HAM LOAF

This recipe was my Sister's contribution when her church decided to put together a cookbook to raise funds, a few years back. The blend of meats produce a taste that that is mild, yet distinctive and from personal experience appeals to even the pickiest of eaters.

Ingredients
1 lb ground ham
1 lb ground chuck
1 lb ground pork
2 eggs
1/2 cup graham crackers
1/2 cup saltine crackers
1 cup milk
Mixing Instructions
Mix thoroughly (15 minutes) and shape into loaf.

Sauce Ingredients
1 8oz can tomato sauce
1/2 cup water
1 cup light brown sugar
1/2 cup white vinegar
1 tsp yellow mustard
Mixing Instructions
Mix together and pour 3/4 of sauce over meat mixture.  Bake in a 9 x 13 greased pan at 300 degrees for 1 1/2 to 2 hours, basting every 15 minutes with remaining sauce.

ORIENTAL PORK TENDERLOIN

              RECIPE INGREDIENTS

1/2 cup honey
3/4 cup soy sauce
Tbls McCormick Sesame Seed
1/4 tsp McCormick Ground Red Pepper
1 1/2 - 2 lb Pork Tenderloin


PREPARATION INSTRUCTIONS
Combine together honey, soy sauce, Ground Red Pepper, and Sesame Seed in small mixing bowl until thoroughly blended.   Brush mixture on tenderloin heavily.  Reserve remaining mixture.  Place tenderloin in lightly greased 9 x 13 baking pan.   Preheat oven to 400 degrees.  Bake tenderloin for 15 minutes, remove from oven and coat with remaining mixture.  Place tenderloin back in oven for an additional 15 minutes.  Remove pan from oven and let stand for 8-10 minutes before slicing.
