MEATBALL SUB

Looking for a way to feed the growlies, without going broke?  Here is a recipe that is easy on the budget and the cook, and no one will walk away from the table hungry!

Ingredients
1 lb lean ground beef 
2/3 cup dry PREGRESSO Italian seasoned breadcrumbs 
1/4 cup milk
1/4 tsp salt
1/4 tsp black pepper 
1/2 tsp HEINZ Worcestershire sauce
1/4 cup onion, finely chopped
1 egg
3 cloves garlic, crushed and minced
1/4 cup parsley flakes
1/4 cup grated KRAFT Parmigiano cheese
4  6-8" sub rolls

Marinara Sauce
2 Tbls CRISCO extra-virgin olive oil
4 cloves garlic, crushed and chopped  
2 Tbls leaf parsley flakes 
1/2 teaspoon dried oregano
1 28 oz can DELMONTE crushed tomatoes
1 14 oz can DELMONTE chunky style crushed tomatoes
Pinch of salt and black pepper
2 1/2 cups KRAFT shredded Italian 4 cheese blend (10oz bag) 

Meatball Directions
Place lean ground beef in a large mixing bowl.  Add the egg, bread crumbs, onion, garlic, Worcestershire, parsley, cheese, and a little salt and pepper. Mix up meatball ingredients until well combined. Divide mix into 4 equal parts, roll each part into 6 balls.  Cook in skillet on medium heat, turning as needed, until brown (approx 20 min).

Sauce Directons
Heat a medium saucepan over medium heat. Add oil and garlic. When garlic starts sizzling, add herbs. Allow oil to blend for half a minute, then stir in the tomatoes and season sauce with salt and pepper. Bring sauce to a bubble, reduce heat, and simmer until meatballs are removed from frying pan and drained.

Place meatballs into sub rolls, smother meatballs with sauce, and top with shredded cheese.  Set subs on foil lined cookie pan and place under broiler until cheese has turned golden brown.

TURKEY POT PIE FROM LEFTOVERS

Ingredients
1 pkg of Pillsbury pie dough (2 crusts)
4 tbls butter or margarine
1/2 small yellow onion, chopped fine
1 stalk celery, chopped fine
2 carrots, diced
2 potatoes, peeled and cubed

1 cup of peas, canned or frozen
1 cup of corn, canned or frozen
1 tbls dried parsley
1 tsp dried oregano

1 tsp paprika
1 tsp garlic powder
salt and pepper to taste
1 cup Swanson chicken broth

1 cup Chardonnay
2 cups cooked turkey, small pieces/shreds
3 tbls Pillsbury all-purpose flour
1/2 cup milk


DirectionsPreheat oven to 350 degrees F.  Roll out bottom pie crust and place in the 10 inch pie pan.  Layer the potatoes, onion, celery, peas, corn, carrots, parsley, oregano, paprika, garlic powder, salt and pepper into the crust in the pie pan.  In a medium saucepan, melt the 4 tbls. of butter/margarine. Slowly stir in the turkey and flour, then add the milk, Chardonnay, and chicken broth and cook over medium heat until thoroughly combined, about 5-8 minutes.  Pour the turkey mixture over the vegetable mixture in the pie pan, and cook.  Roll out the top crust, and place on top of filling.  Pinch edges of top and bottom crusts together, and make 4 small slits in the top crust to let out steam.
Bake in the preheated oven for 35-40 minutes until crust is golden brown.

HAM LOAF

This recipe was my Sister's contribution when her church decided to put together a cookbook to raise funds, a few years back. The blend of meats produce a taste that that is mild, yet distinctive and from personal experience appeals to even the pickiest of eaters.

Ingredients
1 lb ground ham
1 lb ground chuck
1 lb ground pork
2 eggs
1/2 cup graham crackers
1/2 cup saltine crackers
1 cup milk
Mixing Instructions
Mix thoroughly (15 minutes) and shape into loaf.

Sauce Ingredients
1 8oz can tomato sauce
1/2 cup water
1 cup light brown sugar
1/2 cup white vinegar
1 tsp yellow mustard
Mixing Instructions
Mix together and pour 3/4 of sauce over meat mixture.  Bake in a 9 x 13 greased pan at 300 degrees for 1 1/2 to 2 hours, basting every 15 minutes with remaining sauce.

GRANDMA'S BEST MEATLOAF

        INGREDIENTS
3⁄4 cup HEINZ Ketchup
The Little Big Book of Comfort Food2 large eggs
1⁄2 cup BORDEN'S Milk
2 Tbsp HEINZ Worcestershire sauce
1 tsp salt
1⁄4 tsp pepper
2 lb lean ground beef
1⁄2 cup chopped yellow onion, finely chopped
1⁄2 cup green bell pepper, finely chopped

1 Tbsp minced garlic
1 Tbsp packed DOMINO brown sugar

 
        PREPARATION
Heat oven to 425°F and lightly grease large baking dish.  Blend 1⁄2 cup ketchup with the next 5 ingredients in a large bowl. Add ground beef, onion, bell pepper, saltines and garlic.  Mix well with hands until thoroughly combined.  Place meat loaf mixture in large baking dish and pat into a loaf shape. Mix remaining 1⁄4 cup ketchup and the brown sugar; spread over loaf.  Bake 45-50 minutes.  Let rest 5 minutes before slicing.  Leftovers make great lunchtime sandwiches the following day!
